These Chocolate Chip Muffins are to die for – with a cup of toffee nut latte (or green tea if you’re being healthy of course). They are also not as sweet as you would think they are – after all, they are muffins and not cupcakes. Share them with everyone you love and they’ll love you back!
Recipe (makes 30)
- 200 grams butter
- 250 grams caster sugar
- 200 grams dark muscovado sugar
- 4 eggs
- 300ml sour cream
- 10 tbsp milk
- 500grams plain flour
- 2tsp bicarbonate of soda
- 4tbsp unsweetened cocoa powder
- 380grams dark chocolate chips
Ingredients you need – sorry I forgot to take the sour cream out of the fridge and the chocolate out of the cupboard when taking the picture
Measure out 250grams of caster sugar and 200grams of unsalted butter
Measure out 500grams plain flour and 200grams of dark muscovado sugar
Put the butter, caster sugar and dark muscavado sugar into a mixer and mix well
Beat in eggs, cream and milk until thoroughly mixed
Sift flour, bicarbonate of soda and cocoa powder together
Mix dry ingredients into mixture – mix well
Measure out 380grams of chocolate chips, add to the chocolate mixture and mix well with spoon
Spoon mixture into paper cases and bake at 190decC/Gas Mark 5 for 23 minutes (or test with toothpick to see if it comes out clean) Leave for 10 minutes.
