My very good friend N just lost an aunt to cancer and as a thank you, she decided to do a charity bake sale at the office for tomorrow to raise funds for the hospice that cared so well for her aunt. She asked me if I was interested in making some cakes and, of course, I obliged! I mean, any excuse to do some Sunday baking! I decided to make 3 different cakes – Moist Banana Loaf With Chocolate Chips, Blueberry Cupcakes (for those who wanted to be a tad healthy) and Boston Cream Cupcakes.
Here’s what you need for the Moist Banana Loaf With Chocolate Chips;
- 55 grams unsalted butter
- 200 grams white sugar
- 2 eggs
- 4/5 ripe bananas
- 70 grams chocolate chips
- 250 grams plain flour
- 5 grams bicarbonate of soda
- 3 grams salt
- 1 tbsp vanilla essence
- Some brown sugar (optional)
Weigh out 55 grams of unsalted butter
Weigh out 200 grams of white sugar
Weigh out 250 grams of plain flour
Do the monster mash with the bananas. I used a potato masher, and I didn’t quite puree it as I like for there to be chunks in the loaf – makes it a little more chewy.
In a mixer, cream butter and sugar till creamy
Add the 2 eggs to the mixture – mix on a low setting so that your face does not get egged! 🙂 🙂
Add the bananas into the mixture and slowly mix the whole lot together – I mixed it on a super low setting as I didn’t want the bananas to get too mashed up and still have chunks in.
Weigh out about 70 grams of chocolate chips – more if you are a chocolate fiend.
Add vanilla essence to mixture, then add chocolate chips. Put on a medium setting so that that mixture is properly mixed together.
Add salt and the bicarbonate of soda to mixture. Sorry I totally forgot to take a picture of the bicarb of soda! MIX MIX MIX!
After that, preheat your oven to 350 degrees F (175 degrees C). Lightly grease an 8×4 inch loaf pan. Bake for 1 hour and voila! One moist banana loaf with chocolate chips done! As you can see, I had some spare batter and so I made cupcakes – they were delicious and very moist. You can do without the choc chips if you just want pure banana loaf.

Handy tip: Add a tablespoon of brown sugar to the mixture to give it that lovely brown colouring on the top and to make the top extra crunchy!
Yet another handy tip: Add some walnuts and take away choc chips for a healthier option. 🙂
