Shrove Tuesday!

I love shrove Tuesday – its the one day I can eat copious amounts of pancakes and not feel bad. Why? Because you’re meant to. Its got some religious connotation to it – its the day before the start of lent, so right before you give up that tasty treat for 40 days, you get to stuff your face with pancakes. This year – Ive given up fizzy drinks (non-alcoholic of course) and chocolate.

Today, to celebrate the copious amounts of pancake eating, I’ve made apple and cinnamon pancakes – we love them and its a twist on the boring old pancake. Plus, there is apple in the pancake, so its ermm, healthy? Yes. of course it is! Here is the recipe I used, full ingredients list at the bottom of the post;

Weigh out 200grams Self-Raising Flour

Mix flour, sugar and one teaspoon of cinnamon together

Mix together ingredients and form a well in the center

Beat eggs and 200ml of milk together, then pour into the well of dry ingredients

Peel and grate 2 apples, them gently incorporate the shredded apple into the mixture - mix well

Heat some butter in a pan and pour some of the mixture in the frying pan - depending on how you like your pancakes - the better half likes huge ones, so I made him an XXL one

Topped the XXL pancake off with some golden syrup, a light dusting of icing sugar, fresh blueberrys and raspberries.
